Summertime Skewers

What’s easier than throwing your whole meal onto a skewer and grilling it?! Easy to prepare and cook, kabobs are a great summer food and because they a hand held food, they’re great for the beach! Skewers are a versatile meal option because you can eat the cold or hot, raw or cooked. These skewers can be prepped in advanced which is great for camping and day outings, too.

 

Fruit – Most fruits will do. It depends on what you like. I like strawberries, melon, pineapple, and peaches. Because this is a no-cook skewer, the fruit can be different sizes. Making them for kids? Add jumbo marshmallows for a real treat!

Veggies – Use vegetables that take the same time to cook like mushrooms, onion, and peppers and try not to use heartier vegetables like potatoes and carrots. I like mushrooms, onions, peppers, and zucchini.

Caprese – Skewer grape tomatoes, Mozzarella, Basil. Switch it up and use basil, watermelon, and feta cheese instead!

Melon/Prosciutto – Skewer cubes (or balls) or melon, balls of mozzarella, and pieces of prosciutto. Drizzle with balsamic reduction.

Antipasto – Marinate cubes of cheese and cubes of salami in Italian dressing or your own concoction. Skewer with cherry tomatoes, olives, and artichoke hearts.

Greek Shrimp – Marinate shrimp in olive oil, garlic, rosemary, dill, salt, and pepper. Skewer with lemon, grape tomatoes, and onion.

Sesame Style – Marinate your favorite meat in 1 ½ tbsp each of olive oil and water, 2 teaspoons each of rice vinegar, toasted sesame seeds and soy sauce, and a ½ teaspoon of sesame oil. Skewer with mushrooms, onions, and peppers.

Steak – Rub steak with salt pepper and your favorite seasoning. Skewer with onion, peppers, and par boiled potatoes. *boil the cubes of potato for a few minutes before skewering so they cook with the steak.

Sweet Pork – Make a brine by boiling 1 cup of water, 3 tbsp each of salt and brown sugar, 2 teaspoons pickling spices, 4 garlic cloves. Add 1 cup of rum then cool. Add cubed pork tenderloin and let sit overnight. Skewer with pineapple and onions.

Dessert Skewers – Have fun with this: use spiced cake cubes, pineapple and cherries for a twist on a pineapple upside-down cake and grille it! Or rice crispy treats, marshmallows, strawberries for something simpler.
